There are a lot of baked oatmeal recipes floating out there and this the version I made. It's basically modified from what a bunch of other recipes are but I changed it up based on what I had on hand. It is really good - tastes and smells like banana bread and is full of fiber and antioxidants so it's actually filling. It's also made from cheap ingredients so it's a very inexpensive way to feed a crowd.
{Pairs well with coffee and Sunday mornings.}
Recipe |
3 cups oats
3/4 c brown sugar
1 tsp baking powder
1 tsp cinnamon
Mix. Put half of the mix on a greased baking pan. Layer with two sliced bananas and 1/2 cup blueberries. Sprinkle second half on top.
2 1/2 cups milk
2 eggs
2 Tbsp melted butter
Whisk together and pour over dry mixture. Bake uncovered for 40 minutes at 350. (10 minutes before it's done, sprinkle a little extra brown sugar on top for added crunch and sweetness.)
