22 Meals for Less Than $160


Finally getting up my latest round of meals. This one was an easy one to put together. I made 22 meals and I spent less than $160, putting me at about $7.25 per meal. Not bad.

As always, I shopped at Winco and I made 2 of each meal on the menu.

Grocery List |

Meat:
4 (3 lb.) bags of chicken breasts
2 bags of cod or halibut
2 bags of meatballs
1 large pork loin (at least 8 lbs.)
2 lbs. ground turkey
2 packages of bacon

Canned:
4 diced green chilis
2 cans of cream of chicken
2 bottles of orange sauce
4 jars of marinara sauce
1 jar raspberry jam
1 bottle soy sauce
2 cans red enchilada sauce

Dried Goods:
2 packages of tortillas
4 lbs. brown rice
2 packages of spaghetti
2 packages of corn tortillas
2 packages of rolls
Panko bread crumbs

Produce:
1 bunch cilantro
2 limes

Refrigerator:
16 oz. sour cream
1 large bag of shredded cheese

Freezer:
2 bags of popcorn chicken
2 bags of broccoli florets
2 bags of frozen French fries
2 bags of stir-fry/fried rice veggies (your choice)

Seasoning and Marinades:
1 bottle Caribbean Jerk marinade
Lemon pepper seasoning
Chipotle pepper seasoning
Garlic Powder
1 packet taco seasoning
2 packets of fried rice seasoning
2 packets of pulled pork seasoning
Liquid smoke
Brown sugar
Cumin
Chili Powder
Italian Seasoning

Other:
Gallon Hefty bags with zipper
Slow cooker liners
2 foil trays

Label all bags. Orange chicken, fish 'n chips, and fried rice will go straight in to the freezer/pantry. Those are meals I'll make the day of. Red enchiladas will go in the trays. Start browning the ground turkey and work through each meal.

Chicken Enchiladas
8 oz. sour cream
1 can cream
1.5 lbs. of chicken breast
1 can diced green chilis
S&P
2 tsp of cumin
1 tsp of chili or to taste

8 hours on low. Shred and roll with cheese in tortillas (you will keep these in the freezer until the day of), add extra sauce and cheese on top. Bake for 30 minutes at 375.

Caribbean Jerk Chicken
1.5 chicken breasts
1/2 bottle of Caribbean Jerk marinade

Thaw and grill.

Cilantro Lime Chicken
1.5 chicken breasts
1/2 bunch chopped cilantro
1 sliced and squeezed lime
Season with lemon pepper
EVOO

Thaw and grill.

Orange Chicken
1 bag popcorn chicken, prepared to package instructions.
1 bottle of orange sauce.
1 bag broccoli florets, steamed.
2 cups of brown rice, cooked.

Make this the day of. It's like having a ready made meal but it's cheaper and you make more.

Fish 'n Chips
1 bag of cod/halibut
1 cup flour
2 tsp garlic powder
1 tsp salt
1 tsp pepper

Toss thawed fish in flour seasoning mixture, dip in eggs, and bread with panko bread crumbs.

Pan fry in coconut oil.

Prepare fries according package instructions and toss in seasoning salt.

Make this meal the day of and just keep the fish and fries in the freezer so you know it's there.

Spaghetti and Meatballs
1 bag meatballs
2 jars marinara
1-2 bay leaves

7 hours on low. Keep spaghetti in pantry and cook when you are ready to eat.

Raspberry Chipotle Pork Loin
1/2 jar raspberry jam
1/4 cup soy sauce
Season well with chipotle pepper seasoning
2 tsp garlic powder
Add salt to taste

8 hours on low.

Red Turkey Enchiladas
2 lb. ground turkey, browned with taco seasoning and 2 cans of green chilis. Add 2 cans of red sauce.
In a foil tray, layer corn tortillas, meat mixture and cheese. Repeat 3x.

Male 2.

Bake at 375 for an hour, last 15 minutes without a foil cover.

Pulled Pork
2 lb. pork loin
1 pulled pork seasoning
2 Tbsp. brown sugar
1 Tbsp. liquid smoke

8 hours on low. Shred and serve on rolls.

Fried Rice
Store this in pantry.

1 cup rice, cooked
1 bag veggies, steamed
Fried rice seasoning
2 eggs

(You can also add chicken to this if you want.)

Cobb Salad
1.5 lbs. of chicken breast
Season with garlic powder, Italian seasoning, salt and pepper

(Freeze bacon separately)

Prepare bacon. Thaw and grill chicken. Top salad and your favorite salad fixings with chicken and bacon and favorite dressing.


Aaaaaand you're done with dinner for a while.
