Chicken & Dumplings

Chicken & Dumplings In the crock pot: 1.5 lbs. of chicken breasts 1 can cream of  chicken 1 can corn 1 carton of chicken broth 2 chopped carrots ½ celery stalk, chopped 1 tsp garlic powder 1 tsp pepper Salt, if needed 7 hours low.  Other: Tube of biscuits (buttermilk not flaky) After the soup has been cooking, shred chicken. Then Cut biscuits (from refrigerator) into sixths and add to soup and cook for 30 minutes to an hour more. Stir initially but then don't stir while they're cooking because the dough will get sticky. After 30 minutes, stir and break apart Dumplings with a spoon. If still sticky, cook for 15 more minutes. Enjoy!

Pad Thai

Sauce: 2 T Fish Sauce 3 T Brown Sugar (to substitute the palm sugar) 2 T Rice Vinegar + 1 T Brown Sugar (to substitute the tamarind) Melt together over medium heat. (Fair warning: the fish sauce stinks really bad until everything is combined.) UPDATE: I always double the sauce and make all the noodles. Because leftovers. If you choose to double the sauce the recipe is: 1/4 cup rice vinegar, 1/4 cup fish sauce, 1/2 brown sugar. While the sauce is melt pour boiling water over rice noodles to let them soften. I usually only use half the package of rice noodles. Chop up all your veggies. I used sweet onion, shredded carrots, green onion, and zucchini. Slice chicken into thin strips (or have shrimp or tofu ready). Mince 3 cloves of garlic. In a skillet or Wok heat up 3 T of vegetable oil on medium-high heat, add garlic and chicken (thinly sliced) or shrimp or tofu or whatever. Sautee for about a minute. Greek Meatballs

I could give you a long spiel about this meal but that's mean, so I won't. But I will say this: Greek meatballs are delicious. You should make them. Here's the recipe: Greek Meatballs 3 ground beef 1 bunch mint, chopped 1 tsp cinnamon 1 tsp oregano 1 tsp garlic powder 1 tsp salt ¼ cup bread crumbs 1 egg 8 oz. crumbled feta cheese Preheat the oven to 350. Combine above ingredients and roll into meatballs. (About 3 Tbsp in each ball but you decide what you like) Cook for 25 minutes at 350on a lined cookie sheet.  Serve on pitas with tzaziki sauce. Yields 28 meatballs, approximately.

24 Meals for Less Than $200
