This recipe is from the 30 gluten free meals I did last week and it is so good. And way too easy to be this good.
RECIPE:
1 pork loin (mine was approx. 2 lbs.)
Rub the loin with 1 Tbsp. Brown Sugar and 1 Tbsp. of Smokey Mesquite BBQ seasoning
*Optionl - add a few red pepper flakes if you like it spicey
Wrap the seasoned loin with half a package of bacon (or more if you need or wish)
Add half a cup of chicken stock or broth to the crock pot for cooking
Cook in the crock pot on low for 8 hours.
It's the perfect combination of sweet, savory and incredibly juicy. The meat literally falls apart, as does the bacon. The leftovers are great for sandwiches...if you have any.
