10 Meals for $75


I'm headed to Vegas for a sister trip this weekend and I noticed our freezer meal supply was dwindling. Since my husband and I don't know how to function without meals, I wanted to make sure to do a quick restock so my sweet family can be fed and happy while I'm gone. I decided to just do a quick round this time and made 10 meals. I spent $75 and shopped at Winco.

Here's what is on the Menu |

Dirty Rice
Spaghetti (2)
Sausage Bake (2)
White Chicken Enchiladas
Chicken and Stuffing
Chili and Cornbread
Caribbean Jerk Chicken
Pot Roast

Grocery List |

Meat:
2 lbs. ground beef
2 bags pre-made meatballs
2 packages of smoked sausage
2 3 lb. bags of chicken breasts
1 pot roast

Dried Goods:
2 cups brown rice
2 packages of spaghetti noodles
1 package of tortillas
1 box of stuffing
1 box of cornbread mix

Canned:
4 jars marinara sauce
2 cans cream of chicken
1 can diced green chilis
1 can black beans
1 can chili beans
1 can corn
1 can tomato sauce
1 bottle Caribbean Jerk marinade

Freezer:
2 bags of broccoli florets

Refrigerator:
8 oz. sour cream
1 package of provolone

Seasoning:
Montreal Steak Seasoning
Salt & Pepper
Cumin
Garlic Powder
1 chili seasoning packet
1 pot roast seasoning packet

Other:
Hefty gallon sized bags
Slow cooker liners

I only spent 30 minutes in the grocery store and 37 minutes putting meals together - fast and painless.

First thing's first. Label bags for each meal. The smoked sausage and broccoli goes straight into the freezer. Cook the brown rice and brown the ground beef.

Dirty Rice
2 cups brown rice, cooked
1 lb. ground beef, cooked
Montreal steak seasoning to taste (probably 1/2 tablespoon)

To prepare, warm in a skillet until heated through.

Spaghetti
2 jars marinara sauce
1 bag meatballs

6-7 hours on low in the crock pot. Cook noodles stored in pantry.

Sausage Bake 
Slice smoked sausage
1 bag broccoli florets
Cubed potatoes/sweet potatoes and any other vegetable you would like

Lay on sheet pan with EVOO, garlic powder, basil, salt and pepper. Bake at 425 for 45 minutes.

White Chicken Enchiladas
1.5 lbs. chicken breasts
1 can cream of chicken
8 oz. sour cream
1 can diced green chilis
Season with S&P, cumin, and garlic powder

8 hrs on low. Shred chicken and fill defrosted tortillas and roll tortillas into a baking dish. Top with extra sauce from the crock pot and cheese. Bake for 30 minutes at 375.

Chicken and Stuffing
1 can cream of chicken
Season with S&P
1.5 lbs. chicken breasts

Place at bottom of crock pot. Layer provolone cheese and dry stuffing on top. Melt a few tablespoons of butter and drizzle on top. Cook on low 7-8 hrs.

Chili and Cornbread
1 can corn
1 can tomato sauce
1 can black beans
1 can chili beans
1 chili seasoning packet
1 Tbsp. brown sugar
1 lb. ground beef, cooked

8 hrs on low. Serve with prepared cornbread.

Caribbean Jerk Chicken
1.5 lbs. chicken
1/2 bottle of Caribbean Jerk marinade

Thaw and grill. I ended up making 2 of these because I had extra chicken.

Pot Roast
1 pot roast
1 pot roast seasoning packet

Add 1 cup of water or broth when cooking. 8 hrs on low.


Aaaaand ENJOY! 10 (eerrr, 11) for $75.

Sometimes we hear exactly what we need to hear. That's what happened to me this week. Along with motherhood, as many of you know, comes so much worry. Worry about the well-being of your child. Worry about doing things correctly. Worry about giving enough time to your children and enough time to your husband. Worry about finding enough time for yourself. Worry about being a good mom and a good wife. Worry about getting enough sleep tonight so I can have enough energy to get through tomorrow. The list of worries and anxieties go on and on.
