BBQ Chicken Pizza | From Scratch


Our family loves pizza. Who doesn't though? More than anything, we love making pizza dough from scratch. Anytime I can get my littles in the kitchen with me is a blessing. They love it and I love it. This recipe is easy enough to where their little hands can easily help.

I've compared my pizza dough recipe to a few of my friends and they're all basically the same. Here's mine:

1 cup warm water
1 packet active dry yeast
1 tsp sugar
2 1/2 cups flour
1 tsp salt
1 Tbsp. Olive Oil

1. Mix the dry yeast and sugar in the cup of warm water. Place aside.
2. Mix the flour and salt in a large mixing bowl.
3. Add the water/yeast/sugar mixer to the bowl along with the olive oil.
4. Mix until it becomes evenly doughy. (I use my hands)

Place a damp towel over the top of the bowl and let it rise for 30 minutes (or more). Roll out on a pizza tray.

Now for the good stuff...

1. Spread barbeque sauce of your choice evenly over the dough. I usually use 1/4 - 1/2 cup.
2. Finely chop 1/4 cup of spinach. Sprinkle half of it on the sauce.
3. Add cheese. I usually prefer a Monterey Jack/mozzarella mixer but whatever you like or have is fine.
4. Add 1/2 - 1 cup of cooked chicken. I usually just thaw some from my bulk meat cooking.
5. Top with 4-6 sliced mini peppers (or two large bell peppers) and the rest of the spinach.
6. Sprinkle with a touch of cilantro.

Bake for 20-25 minutes at 400 degrees.

**Note: I add spinach to give the pizza a little more nutrients. Since spinach doesn't have a whole lot of flavor it can easily be added and go unnoticed if chopped finely enough.

Am I pregnant or stupid?

I've read stories about people getting the "pregnant stupids" and while I think they're hysterical, I think I've got them...bad. All the time. Every day. My guess is that because I lucked out with morning sickness (or lack of), God decided to turn me into an idiot. Case in point. Thursday afternoon, I drove all the way home from work (about 20 minutes) only to realize I forgot my work keys, which I needed to open the office the next morning. So I had to rush back to work before my co-worker left at 5 p.m. to grab them. She looked at me like I was crazy. I told her I was. Then when I got home, Darren and I were going to meet my aunt and uncle and cousins downtown for dinner. So we rushed off to dinner and as soon as we hit the busy grid of downtown, I realized, I FORGOT MY PHONE. A Prayer For You

Last Sunday, Pastor Carlton did a child dedication and one of the things he asked the parents to do was come up with a bible verse they'd like to dedicate to their son and daughter. I cried, of course, but it really got me thinking. What bible verse do I want to dedicate to Isaiah? It didn't take me long to come up with this one because it has meant so much to me during my years of "growing up" not only because of how relevant it feels in almost every situation but because it reminds me of one of the greatest qualities God gives us: HOPE.
